– 1 teaspoon cumin
– 1/2 teaspoon chili powder
– Salt and pepper, to taste
– 8-10 corn tortillas
– Avocado Crema (recipe below)
– Optional toppings: diced avocado, sour cream, shredded cheese, cilantro, diced tomatoes

Instructions:

1. Press the “Saute” button on the Instant Pot and cook the onion, garlic, and bell pepper until tender.
2. Add lentils, diced tomatoes, vegetable broth, cumin, chili powder, salt, and pepper. Stir to combine.
3. Close the lid and set the valve to “Sealing”. Cook at high pressure for 20 minutes, followed by a 10-minute natural release.
4. Open the lid and stir in any remaining liquid. Serve with tortillas, Avocado Crema, and desired toppings.

Avocado Crema:

– 3 ripe avocados
– 1/2 cup sour cream
– 1 tablespoon lime juice
– Salt, to taste

Combine all ingredients in a blender or food processor until smooth. Refrigerate until ready to serve.
